Gamba starts her day with just water—no coffee or juice, just water. Sometimes, she adds lemon to the water, but she makes sure to drink it before anything else and continues to stay hydrated all day.
Gamba loves cold-pressed juice and will drive twice a week to collect it from a local merchant. The juices are made from tons of healthy fruits and vegetables, including spinach, pineapple, celery, ginger, and beets.
Gamba loves a platter of chopped vegetables for lunch—this is her first meal of the day at 2 p.m. She enjoys red peppers and cucumbers with a side of blueberries and Trader Joe's Goddess dressing.
Gamba loves a fennel citrus salad for a meal about an hour after her vegetable platter. The salad is made of oranges, pistachios, avocado, feta cheese, and fennel. She dresses the salad with extra virgin olive oil.

Gamba makes different variations of cauliflower steaks for her dinner, mixing up the vegetables. "Sometimes I'll use Brussels sprouts, sweet potatoes, or even just fish," she says.
Gamba makes her own dressing for vegetables made of tahini, lemon, and maple syrup, thinning it out with water to get the right consistency. Gamba tops the cauliflower steak with just one very sweet date and adds a side of organic brown rice.
